Pressure Cooker Perfectly Cooked Pot in Pot Rice is great when you want to make rice right in the serving bowl. White Rice, Jasmine, Basmati all work well.
When Beep sounds, allow a 10 minute Natural Pressure Release.
Fluff rice and serve.
Notes
For a larger portion 3 "rice" cups (18 oz) White Jasmine Rice 2 1/4 cups (18 oz) Fresh WaterThe water in the Pressure Cooker cooking pot is only used when you make the rice PIP by itself. When using this method on top of other recipes/entrees, follow that other recipe and place a trivet and your pan full of rice and water. If you want to make rice with your favorite Pressure Cooker recipe (assuming the cook time is 5-8 minutes with an NPR), just add the Tall Trivet and the pan of rice and you are good to go! For really short Pressure Cooker cook times you will need to add 1/8 cup more water and cover the rice after removing the pan from the Pressure Cooker and allow the rice to steam, while you are tending to your main course. The recipe/method will NOT work, if you have a long cook time, as the rice will become mushy. :)
