Whisk together orange juice, sugar, cinnamon and True Orange Ginger (or grated ginger).
Add cranberries and juice to the Pressure Cooker cooking pot. Add cinnamon stick.
Lock on lid and close pressure valve. Cook at High pressure for 1 minute. When Beep sounds, wait 5 minutes and then release the rest of the pressure.
Open lid and add Orange Zest.
Notes
The longer you cook, the more the cranberries break a part. To keep them relatively whole, cook for 1 minute. For a more sauce like consistency, cook for 4 minutes.Sauce will thicken as it cools.Maple Syrup or White Sugar can be used in place of Demerara Sugar.
