Fresh Tomato Salad is enjoyed year round. Whether using grape, cherry or Roma tomatoes, pairing juicy tomatoes with a simple marinade feels like summer.
Peel and slice carrots into 1/4" slices and add to cooking pot. (If a firmer carrot is preferred, slice the carrots thinner and add the carrot slices to the hot marinade after pressure cooking.)
Lock on lid and close pressure valve. Cook at high pressure for "0" minutes. This is not a typo, ZERO is correct.
When beep sounds, carefully and with a jiggling action, remove the pressure right away.
Remove lid from Instant Pot or pressure cooker and remove cooking pot from the base.
Mix the diced onions into the marinade and set cooking pot on wire rack to cool, about 15 minutes.
Alternatively, pour the marinade into a large measuring cup and place on wire baking rack to cool.
While marinade is cooling, wash and slice tomatoes lengthwise and place into a serving bowl.
Once cooled, pour marinade with carrots and onions over sliced tomatoes and mix through.
Place serving bowl into refrigerator until ready to serve.

Roma and Heirloom tomatoes work well too. Just cut them into bite size pieces.Using the Instant Pot, Mealthy MultiPot or Pressure Cooker to warm the marinade, eliminates the need to marinate the veggies in the fridge for overnight or for several hours and the salad can be enjoyed right away at room temperature or can be placed in the refrigerator to chill.The addition of carrots to this Fresh Tomato Salad adds more depth of texture and flavor. So that the carrots are not raw, they get a quick parboil in the Instant Pot, Mealthy MultiPot or Pressure Cooker prior to being mixed in with the tomatoes. This allows the carrots to absorb the marinade without having to refrigerate overnight. Alternatively, for a firmer carrot, slice the carrots very thin and add them to the hot marinade after removing the lid from the pressure cooker.Some people do not like raw onion. Adding in the onion to the warm marinade allows the onion to slightly soften and absorb the flavors, without cooking the onion, so that there still is a slight bite to the onion without a stark raw taste.To change the flavor of the marinade a bit, try balsamic vinegar.Make sure to have a loaf of a warm and crusty bread to dunk into the marinade, while enjoying the salad.
