Fried rice is one of the dishes I miss since starting a low carb diet.
Rice really cannot be replaced with cauliflower and imo, cauliflower isn’t as wonderful as others would have you believe. 🙂 I mean, there are exceptions, like my Pressure Cooker Cheesy Cauliflower Soup (which is seriously delicious) and my Pressure Cooker Mashed Cauliflower, but really, this veggie does not ever take the place of rice or bread. I’m just not gonna lie.
That being said, my keto Instant Pot Chicken Fried Cauliflower Rice makes a great side dish for a low carb diet. It does not taste like rice, but the flavors are that of good Chinese fried rice, so, it’s something, right?
With my easy method, using your Instant Pot, Ninja Foodi or Pressure Cooker, you will have juicy and tender chicken with firm fried cauliflower rice.

Ingredients to Instant Pot Chicken Fried Cauliflower Rice.

- Olive Oil or Grapeseed Oil
- Pure Sesame Oil
- Soy Sauce or GF Soy Sauce
- Eggs
- Onion, Carrot, Garlic
- Butter – this adds a richness to the dish
- Scallions
- Riced Cauliflower
Toasting the cauliflower in a very hot pot with oil adds a nice flavor and will help with the chew of the cauliflower rice. Ricing your own cauliflower is super easy.
How to Rice Cauliflower
- Break cauliflower into pieces and place in food processor.
- Pulse just a few times for perfect cauliflower rice. There is no need to spend extra money on a bag of already riced cauliflower.
Pro Tip: Toasting the cauliflower in hot oil and soy sauce will achieve a slightly chewy texture, plump the cauliflower, as well as helps to remove some of the moisture in the cauliflower.
There are so many delicious ways to use cauliflower in a low carb diet. My Instant Pot Low Carb UNStuffed Cabbage Rolls make an incredible meal. In this recipe, the cauliflower is substituted for the rice and adds so much moisture to the meatballs. It’s fabulous and I highly recommend this recipe.
A little sautéing of the onions and the aromatics add so much depth to the recipe. It also helps to cook off some of the water from the veggies and concentrate the flavor.
Why Partially Scramble Eggs?
- To make the incorporation of the eggs, cauliflower and chicken perfect, the eggs are slightly scrambled with a touch of sesame oil prior to pressure cooking.
- After a short cook time, the cauliflower rice and eggs are added back to the pot to incorporate with the chicken and onions to quickly finish cooking.
If you are following a strict keto diet, you might want to omit the carrots.
Low carb followers and people doing dirty keto, don’t seem to mind small amounts of carrots.

Tips and Tricks for Instant Pot Chicken Fried Cauliflower Rice
- Use a good food processor to make your own cauliflower rice. There is no need to buy prepared riced cauliflower.
- When toasting the riced cauliflower, make sure the pot is as hot as it can be.
- Pre cooking the eggs a bit, will ensure that there are chunks of eggs, rather than having the fried rice look like an omelet or scramble.
- Cook off all excess water before adding the carrots and chicken. The chicken will produce enough water for the pot to come to pressure.
- Chicken thighs are much more forgiving than white meat chicken. If you want to use white meat chicken, use “0” for the cook time, otherwise, follow the instructions on the below recipe card.
Other vegetables such as bok choy, bean sprouts and bamboo shoots. Shrimp is great in this recipe!
More eggs can always be used if you like lots of eggs in your Instant Pot Pressure Cooker Chicken Fried Cauliflower Rice.
The toasted cauliflower, mixed with the lightly scrambled eggs will cook up quickly after pressure release.
No mushy cauliflower is always a good thing.
Serve with a little extra soy sauce.
You can see from the photos that the cauliflower is not mushed!

Instant Pot Pressure Cooker Chicken Fried Cauliflower Rice

- 4 Tablespoons Avocado Oil divided
- 5 large Eggs beat
- 1/3 cup Soy Sauce divided
- 1 large Cauliflower riced
- 2 Tablespoons Salted Butter
- 1 medium Red Onion rough diced
- 5 cloves Fresh Garlic minced
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Ground White Pepper
- 1 medium Carrots cut into match sticks
- 1 pound Boneless Chicken Thighs diced into 1 inch cubes
- 2 teaspoons Pure Sesame Oil
- 4 Scallions chopped

Instructions
- Select Sauté/Browning on pressure cooker, adjust to high heat and allow pot to fully heat.
- Add 1 Tablespoon avocado oil to cooking pot. Pour in whisked eggs and let sit 10 seconds. Scramble eggs until they begin to come together and then remove them to a medium bowl.
- Add 1 Tablespoon avocado oil and 2 Tablespoons soy sauce and deglaze cooking pot, scraping up any stuck on egg. Add riced cauliflower and toast in oil for 2 minutes. Remove cauliflower from pan and add to bowl with eggs.
- Pour in 2 Tablespoons avocado oil, butter, onions, garlic, white pepper, salt and sauté for 2 minutes.
- Mix in chicken.
- Lock on lid and close pressure valve. Cook at high pressure for 2 minutes. When beep sounds, wait 5 minutes and then release the rest of the pressure
- Open lid and push Sauté/Browning. Push food around allowing any excess liquid to evaporate.
- Once most of the liquid has evaporated (if excessive, pour some out), make a clearing in the center of pot and pour in sesame oil.
- Add the partially cooked cauliflower and eggs and quickly stir as eggs begin to firm.
- When eggs are no longer super loose, mix the egg/cauliflower mixture into the chicken and stir until eggs are cooked.
- Stir in the rest of the soy sauce and scallions and serve.
