Low Carb Chicken Schnitzel {Chicken Cutlets} is a very popular dish in Israel and Jewish households.
When I went to the High School in Israel, we ate chicken schnitzel all the time.
You will find it in all the Israeli restaurants and very often it is served inside pita bread. Traditionally, lemon juice is squeezed on top of the schnitzel.

What is Schnitzel?
Schnitzel is a German word. It means meat that has been pounded thin, breaded in egg and bread crumbs and then pan fried.
The meat is butterflied and then using a mallet, pounded thin.
The name schnitzel originated in Austria and was made with veal or pork.
Jewish immigrants adapted this treif (Yiddush word meaning non-Kosher) dish to suit their unique dietary Kosher laws. Chicken and turkey replaced the pork and veal.
Schnitzel is similar to the French dish called escalope. In South America, it is referred to as “milanesa.”
An Italian dish similar to schnitzel is called chicken parmigiana. Mozzarella cheese and marinara sauce is added after the chicken or pork has been pan fried.
For many years, I have made chicken schnitzel and now I have converted my recipe to be keto and low carb compliant. Guess what? It is just as good, if not better! Yep, I am not joking.
First thing is to make my Creamy Curry Mustard Sauce.
Making a low carb breading which would be equally as delicious as a carb full breading was fun to create. My TOG All Purpose Low Carb Breading mixes up in just a few minutes and is seriously a perfect breading for chicken cutlets.
Clearly though, my recipe is still treif, so Kosher folks won’t be able to enjoy. 🙁 However, I learned in Sunday school that if health issues are present, then it is okay to do something not Kosher. For example, if someone needed a heart valve replacement, a pigs valve is fine to use in a Jewish person. I’m sure this scenario is not the same as a heart problem, but if using certain foods to keep my sugar and weight down is good for my health, then, I’m okay with it.
Low Carb Chicken Schnitzel starts with butterflying the chicken breast.
Use a good meat tenderizer to pound the thick end of the chicken even with the thinner side.
The chicken will almost double in size!
I’m a huge fan of cast iron!!
Don’t you love all the reflections and oddities in my skillet? I’m cooking on my actual stove. Many bloggers have a portable burner they use on a counter top, so they can light it nicely. I like using gas burners and cooking on my own range.
Why Use Cast Iron?
- It lasts forever.
- Seasoned correctly, you will have a lovely non-stick surface.
- It cooks evenly.
Remember to allow the cast iron skillet to heat and then add oil.
Coconut oil or avocado oil works well for this Low Carb Chicken Schnitzel recipe.
My Flat Whisk is great for whipping up the eggs to make an egg wash!
With only a few ingredients, you will have dinner on the table in no time!

Since I decided to use my cast iron skillet, rather than my air fryer to pan fry, I decided to use an egg wash.
In all three recipes, any of those ingredients can be switched around to make new recipes!
How to Make Chicken Schnitzel.
- Butterfly the chicken breasts.
- Pound them evenly.
- Coat in an egg wash.
- Dredge in TOG Low Carb Seasoned Breading.
- Fry them up in a pan.
It is super easy and makes a delicious lunch or dinner.
However, I do love to have schnitzel for breakfast, with a fried egg on the top!
It’s so funny.
Prior to low carb, I rarely pan fried anything.
Tips and Tricks.
- Place chicken between plastic wrap, so that you don’t tear up the chicken.
- Use a good mallet to pound the chicken.
- Add the oil after the skillet had preheated for five minutes.
- Don’t move the chicken cutlet around in the skillet. Wait until it forms a nice crust and then it can be moved or turned.
- Only turn over the chicken one time.

Ingredients
- 2 pounds Chicken Breasts Boneless/Skinless boneless/skinless
- 1 cup TOG All Purpose Low Carb Breading
- 2 large Eggs
- Pure Virgin Coconut Oil or Avocado Oil
- Creamy Curry Mustard Sauce

Instructions
- Heat skillet on medium high heat and pour in oil so that it is about 1/4 inch high.
- Butterfly chicken breasts and place between plastic wrap.
- Use a mallet and pound chicken until thin and even.
- Make a breading station by whisking eggs in one flat bowl and place TOG All Purpose Low Carb Breading in the other.
- Dip each piece of chicken into egg wash and then into low carb breading. Make sure chicken is completely coated with the breading.
- Place each schnitzel into skillet with oil and fry three minutes on each side, or until golden brown.
- When cooked, remove to a paper towel to drain.
- Plate and serve with Creamy Curry Mustard Sauce.
