My Low Carb Belgian Waffles are going to be your go-to breakfast waffle! They have a wonderful taste and there is no aftertaste!
A popular breakfast recipe is my Pressure Cooker Low Carb Egg Bites. We love eggs, but sometimes need a change and Low Carb Belgian Waffles are just the thing.
But, this recipe is a great replacement for low carb and keto followers! So many low carb and keto bread recipes are so dense and taste like sawdust. Or, they leave an aftertaste.
Well sir, I am still not used to low carb alternatives, however, I keep trying and will persist. My Low Carb Belgian Waffles make a great breakfast and are a great for low carb eating!

Ingredients for Low Carb Belgian Waffles
- Eggs
- Cream Cheese
- Coconut Flour
- Butter
- Vanilla Extract
- Chia Seeds – they help to bind the ingredients and make the batter thick!

If you follow my Facebook Cooking Group, you know that I make the best waffles ever! Many members have been using various waffle recipes as sandwich bread! Chaffles as they are now being called. I recommend this Chaffle Maker.
Food processors are amazing and are so handy. They make chopping and mixing so easy and save so much time.
How to Make Low Carb Belgian Waffles.
Toss all ingredients into a food processor. Process until smooth. Heat up the Belgian Waffle Iron/Maker while the batter rests and thickens. Cook waffles according to manufacturers directions. Easy.
One of the favorite Chaffle sandwiches is to make my Pressure Cooker Low Carb Deviled Egg Salad Roll Ups and instead of rolling them up in cabbage, use this Low Carb Belgian Waffle recipe instead. A perfect Chaffle Egg Salad Sandwich!
A good food processor will whip up the batter really quickly.
Did you know that if you add just a little sugar free maple syrup to the batter, that it will help to crisp up the waffle?
Mix the batter until very smooth, no lumps.
What is the Texture of a Low Carb Belgian Waffle with Coconut Flour?
- The waffles have a cake like texture.
- They are softer then waffles made with all purpose flour.
- Low Carb Coconut Flour Belgian Waffles feel more like pancakes, but crispy and with deep pockets for holding more butter!
Coconut Flour is very dense and absorbs liquids, but is also a smooth flour substitute and will brown nicely.
Remember, low carb flour and sugar substitutes take time to get used to, as your body is used to other tastes and textures.
After a bit, you and your body will be used to this new way of eating and grow to love low carb breads and desserts.

Crispy Waffles v. Soft Waffles
- Your waffle maker probably beeps when it is ready to use.
- Then beeps again, when the waffle is ready.
- Use that beep only as a guide and cook the waffles to your desired crispness.
For crisper waffles, bake longer, but be careful not to burn the waffle.
Pro Tip: Start with a very hot waffle maker. You want the waffle plates to be super hot before adding any oil.
Avocado oil or coconut oil work well on the waffle maker. An Oil Mister will help to make sure the plates are generously oiled, so that the waffles won’t stick.
Generously grease waffle iron/maker.
What is a Chaffle?
- Just cheese and egg and any seasonings you want.
- They are used for mini pizzas and sandwiches.
Pro Tip: For making Chaffles, I love to use my Chaffle Maker as it is the perfect size for a sandwich! Pile on sauce and pepperoni and you’ve got yourself a mini pizza.

Can Low Carb Belgian Waffles be Frozen?
Definitely. Waffles freeze well.
If you plan to freeze, under cook the waffles a bit, so that when you reheat in the air fryer or oven, they will crisp up, without over baking and burning.
Pro Tip: As it can be a pain to pull out the waffle maker each time you want waffles, make a double batch!
In this house, we usually make a double or triple batch and then freeze waffles with a piece of wax paper in between each waffle.
This is perfect for my husband. I like mine quite crisp.
Use a silicone spatula to lift waffle off the iron and place onto plate.
Tips and Tricks for Low Carb Belgian Waffles
- Adding a little sugar free maple syrup to the batter helps to crisp up the waffle.
- Scrape the batter from the sides of the food processor with a spatula.
- Let the batter sit and thicken.
Pro Tip: Chia Seeds are a great thickening agent, as well as being good for the low carb diet, as they contain, dietary fiber, fat and protein. Some people use Xanthan gum as a thickener
Add a dollop of butter and delicious Maple Sugar Free Pancake Syrup.
For another and really delicious waffle flavor, use my Cardamon Spiced Vanilla Sugar (low carb) in place of the non-flavored low carb sugar.

Ingredients
- 8 ounces Cream Cheese
- 6 large Eggs (or 7 medium)
- 1/3 cup Coconut Flour
- 3 Tablespoons Butter
- 1 Tablespoon Chia Seeds
- 2 teaspoons Lakanto Maple Sugar Free Pancake Syrup
- 2 teaspoons Lakanto Low Carb Sugar Substitute
- 1 teaspoon Pure Vanilla Extract
- 1/2 teaspoon Baking Powder
- 1/4 teaspoons Ground Cinnamon
- 1 pinch Sea Salt

Instructions
- Add all ingredients to food processor and process until smooth. Use a spatula to scrape down the sides and process again.
- Heat Belgian Waffle Iron until hot and spray generously with oil.
- Place about 1/2 cup of batter into center of Belgian Waffle Iron and close lid. Using the handle, rotate the waffle iron to lock into place. Cook for about 6 minutes, or until desired crispness.
- Use a silicone spatula to lift waffle off the iron and place onto plate. Top with butter and maple syrup.
Notes
How to Freeze Waffles
- If you plan to freeze, under cook the waffles a bit, so that when you reheat in the air fryer or oven, they will crisp up, without over baking and burning.
- Place a piece of wax paper between each waffle to prevent sticking and place the waffles into an air tight container, like a baggie or foodsaver.

Thank you for sharing this beautiful recipe. I think you may be mistaken about the xanthan gum. Maybe you confused it with xylitol? Both xylitol and xanthan gum are natural products. Xylitol can be lethal to dogs; xanthan gum is regarded as safe for pets. It is sometimes even found in pet foods. But I love your idea of using chia seeds as a thickening agent and can’t wait to make this recipe for our weekend breakfast.
